Nigerian spring roll is a very popular snack, usually called ‘small chops.’ It is usually served as appetisers at parties and other festive occasions....
It is very nutritious and popularly used as starters for meals.
It also contains spring onions that have sulphur compounds which helps in reducing and controlling blood pressure levels.
Spring onions help to reduce cholesterol levels as well. The chromium content in spring onions provides health benefits for diabetics. It controls the blood sugar levels and improves glucose tolerance. Allyl propyl disulphide is also very helpful in lowering blood sugar levels.
Cabbage, another ingredient in spring roll, has adequate amount of minerals like potassium, manganese, iron, and magnesium. Potassium is an important component of cell and body fluids that help in controlling heart rate and blood pressure.
Cabbage is a very good source of Vitamin K, so enough Vitamin K in the diet gives us healthy bones.
There are several varieties, but the most popular one is made with a spring roll wrapper filled with minced chicken and vegetables.
Ingredients
-1 cup flour
-1/8tsp salt
-3/4 cup water
-Oil spray to grease the pan for frying batter.
-Oil for deep frying with filling.
Filling
-1 tbsp oil
-250g shredded chicken (slightly cooked).
-1 clove garlic
-1 tsp of grated ginger
-125g mushrooms
-2 spring onions (chopped)-1 carrot (shredded)
-125g prawns (slightly cooked)
-2 tbsp soy sauce
-Salt to taste
-Cabbage
-Sift flour and salt into a bowl.
-Add the water to make a smooth batter.
-Leave to rest for 45mins.
-Lightly grease an 8-inch (20cm) frying pan or use oil spray.
-Place over moderate heat.
-Pour in just enough batter to cover the base of the pan.
-Turn and cook other side.
-For the filling, put the oil in a pot and place on low heat
-Add the ingredients into the pot and stir for about 15 seconds.
-Cook for another 10 seconds and remove from heat.
-Allow to cool before making the rolls.
-Put the filling in the cooked dough, roll up and deep fry.
